Mango Mini Tarts


It’s been so long since I asked for suggestions for a Florida recipe using puff pastry for an assignment by Pepperidge Farm. I got some great suggestions in the comments, including using hearts of palm or callaloo, but I took the obvious route and made mango tarts.

Mangoes were the first thing I thought of when I was asked to do the recipe and not because of the name of this blog. I did try other stuff like a star fruit tarte tatin, which could have worked after some tweaking, but D didn’t love it the first time so I quickly abandoned that idea (remember I was also pressed for time).

After I submitted the recipe, the people at Pepperidge Farm tested it and suggested the addition of whipped cream and lime zest. So, it ended up being a mango and lime tart. The final recipe is now on the Pepperidge Farm Puff Pastry website as part of the bloggers recipe collection. Check it out.
