My mom's pies were the best. She had such a knack for rolling out pie dough and making it so tasty and so flaky. She used to make lemon meringue for my dad and coconut cream for my brother and me. She loved pumpkin pie, but no one would eat it so she never made it. The best part of the meal was her stuffing. It was just plain bread stuffing with herbs and spices, but it was so good. It was my favorite leftover! Turkey was okay for the main meal and that was plenty for me, but oh that stuffing!!! I guess it was so tantalizing because she never made it any other time of the year.
