Halloumi is such a delicious cheese. It is true that Cypriots like it together with watermelon, especially in summer when it is warm. Another way to enjoy Halloumi is to fry it in a pan or to grill it and to put it together with vegetables like tomatoes, onions and salad into a pita bread. It makes a very delicious and fast to prepare lunch.

Yum . . . this reminds me of Greece. I like your idea for wrapping it in proscuitto. Maybe with a little olive-fig marmalade on the side . . . mmmm.

By the way . . . if you haven't already, please stop by www.generouspour.com to help me raise money for Share Our Strength towards ending hunger in America. You don't have to buy anything, pay anything or even do anything -- other than download a cool song by Corinne Bailey Rae and pick up some new holiday recipes (and a nifty widget for your blog if you're so inclined). Thanks for your support!

Kalyn and Andy - If there's a Whole Foods in your area maybe they carry it. I did a search and found that at igourmet.com they sell it online. Not sure how good that would be but may be worth a try.
