Mango and cucumber salsa

I’m a big fan of salsas, especially fruit salsas. On Saturday, I made this one for a BBQ. My mom gave me the recipe a while back. It’s great with salmon and grilled chicken. I personally like eating it by itself too, and it can be prepared in 10 minutes. (It might be an option for chef Dennis).

Ingredients

1 mango, in small dice
1 cucumber, in small dice
1/2 red onion, in small dice
1/2 jalapeño pepper, finely chopped*
Juice of 1 lime
Cilantro, chopped, to taste**
Salt and pepper, to taste

Preparation

Mix first four ingredients in a bowl, then add lime juice, salt, pepper and cilantro to taste.

Cook’s Notes

* I only added half make a jalapeño pepper to this one because I wanted to go easy on the spice for some friends who don’t like it. However, you can add a little more if you like.

** I added a little more than a teaspoon of cilantro. I usually just tear it with my hands and sprinkle it on the salsa, then mix it in.
